Apple Cinnamon with Ginger Ale Sauce
Mix all ingredients excluding bread in bowl. Soak bread in mixture. Pour entire concoction into greased baking dish, let set 30 minutes. Bake in 350 degree oven until knife inserted in center comes out clean. For Sauce whip together ½ C Ginger Ale, ½ tsp Cinnamon, ½ tsp Rum Extract, a dash of salt, and 2 packets of dry whipped topping until just foamy. Serve pudding in decorative dishes and spoon sauce over individual servings.
Traditional with Cream Cheese Sauce
Comine eggs, milk, vanilla, spices, and salt. Stir in brown sugar. In a loaf pan, layer bread, raisins, apples, and nuts. Pour egg/milk mixture over top of the bread, making sure all bread is covered with liquid. Place pan in a larger shallow pan on middle oven rack. Pour hot water into larger pan, making sure water comes up side of loaf pan at least 1 inch. Bake at 350 degrees about 45 minutes or until knife inserted halfway between center and edge comes out clean. Remove loaf pan only, leaving water dish to cool in oven to prevent accidental scalding. For sauce, use 1 container cream cheese cake frosting. Mix with ½ tsp cinnamon, ½ tsp nutmeg, ½ tsp rum extract in microwave-safe bowl. Microwave in 10 second intervals, on half heat until syrup like and spoon over servings of bread pudding.
