Blackened Cajun Tilapia

  • 1 tsp paprika
  • 3 tsp salt
  • 1½ tsp onion powder
  • 1½ tsp garlic powder
  • 1 tsp cayenne pepper
  • 2 tsp pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • butter
  • Tilapia filets

Melt butter in bowl large enough to dip filets in and set some aside for serving.  Mix spices together.  Heat a cast iron skillet, 6-9 minutes.  Dip fish in butter then coat with spices.  Place filets in hot skillet and pour 1 tsp butter on top of fish.  Cook until nice crust forms then flip, pouring another tsp butter on fresh side.  Cook 2 minutes or until done.  Transfer cooked filet to warmed platter.  Wipe skillet clean before repeating with new filet.

 

Spicy Cajun Fish Dinner

  • 1 Pkg Jambalya rice mix
  • 1 Tbsp butter
  • 1 C bell pepper
  • 4 Tilapia filet
  • ½ tsp cayenne pepper
  • ¼ tsp oregano
  • ¼ tsp thyme
  • 1 Tbsp olive oil
  • ½ C tomato, chopped (optional)
  • ¼ C parsley (optional

Prepare rice as directed.  Sprinkle fish with seasonings.  In large skillet over medium-high heat, melt butter and oil until hot.  Add fish and cook 4 minutes.  Flip filets and reduce heat, cooking until flaky.  Serve over rice and top with tomatoes and parsley.
